Pumpkin, peanut butter, and chocolate - some of my favorite things all in one recipe!
This is a very quick and easy vegan, gluten-free recipe that only requires 3 main ingredients (ok also some baking powder and I do recommend adding vanilla and cinnamon)! It has a great fudgy brownie texture and is made with basic, healthy ingredients.
You can substitute an alternative nut or seed butter to adjust for allergies or make it nut-free. You could add some sweetener if desired, but I thought it was great without given all the great flavors together. You could even enjoy the batter unbaked as it is delicious, and would be great layered in a parfait or smoothie bowl.
Ingredients (makes about 9 brownies):
- 1 ⅓ cup pumpkin puree
- 1/3 cup creamy peanut butter
- 1/2 cup cacao powder
- 1-3 tbsp maple syrup/honey to sweeten if desired
- ½ tsp baking powder
- about 1 tsp cinnamon or pumpkin spice (optional but recommended)
- 1 tsp vanilla (optional but recommended)
- Chocolate chips (optional but recommended)
Steps:
Preheat oven to 350F and lightly oil an 8 x 8 in baking dish.
Mix all ingredients together in a bowl until evenly combined, adding the chocolate chips last. It will be thick.
Add the mixture to the baking dish, and bake for 15-20 minutes, until a toothpick inserted into the center comes out clean. Let cool, then enjoy!
