Sweet Potato Slider

I made sweet and savory sweet potato “sliders” for breakfast today!


They were super tasty, although messy to eat because I went a bit overboard on the fillings! But as my dad always says, “if it ain’t messy, it ain’t good!”


To make the sweet potato slices, either microwave or roast the sweet potato until it is soft enough to slice. I microwaved it this time because I was hungry and wanted to eat quickly!


Steps

1. Clean the potato and poke it with a fork a few times.

2. Place it on a microwave safe plate and microwave for 2-3 minutes, pause and rotate the potato, and microwave for another 2-3 minutes until soft.

3. Slice the sweet potato and peel the skin off if desired. If you want the slices a bit more crispy, you can toast them!

4. Add the toppings of your choice to half of the slices, then place the remaining slices on top to make little sandwiches!



For the savory toast, I added avocado, egg with pepper, basil, and turmeric, slices of chicken sausage and sun dried tomatoes.



For the sweet toasts, I added a generous spoonful of creamy peanut butter, chia seeds, raspberries, and cinnamon (tasted like PB&J!) for one (see first photo); and blueberry yogurt with blueberries and cinnamon on the other.


These were very tasty, and I enjoyed them very much, as you can tell by my empty plate! #cleanplateclub
