St. Patrick's Day Green Muffins

To celebrate St. Patrick’s Day, I made green chocolate chip muffins! The green color comes from spinach, so it’s a tasty way to eat your vegetables in the form of a baked good! I brought them to my musical rehearsal (it was for the show Heathers) to share and they were a hit!



Here’s the recipe:


Ingredients

dry:

2 cups flour

½ tbsp baking powder

½ tsp baking soda

¼ tsp salt

wet:

⅓ cup maple syrup

5 oz spinach

1 banana

18 oz milk

1 egg

1 tsp vanilla extract

mix-ins:

1 cup chocolate chips


Steps

  1. Preheat oven to 350 F.

  2. Mix the dry ingredients in a bowl.

  3. In a blender or food processor, add the wet ingredients. Blend until smooth.

  4. Add the blended wet ingredients to the bowl with the dry ingredients and mix well.

  5. Fold in a cup of chocolate chips, and pour into a lightly greased muffin tin. Bake for 20-25 minutes, let cool, and enjoy!
