I often get asked for recipes that can be made without a kitchen, and I know many of you are college students in dorms with just a microwave and mini fridge, so here is a quick and easy healthy breakfast: a savory mug egg bake! I have posted many mug recipes, but all my other posts have been sweet mug cakes or bakes, so if you want a savory breakfast, this is for you!
You can add pretty much any vegetables or fillings you’d like to this egg bake! I added sliced chicken sausage, mushrooms, asparagus, onions, mixed veggies, sun dried tomatoes, and sweet potato chips. Here is how to make it:
Ingredients
2 eggs
2 tbsp milk
Salt and pepper to taste
Veggies/fillings of your choice
Steps
Lightly oil a microwave safe mug, then whisk 2 eggs with about 2 tbsp of milk, salt and pepper, and veggies/fillings of your choice.
Microwave for one minute, pause so it doesn’t overflow and stir a bit, then microwave for another minute or two until the eggs are cooked thoroughly.
I added kale chips, avocado slices, and nutritional yeast on top after cooking. Let cool for a few minutes, then enjoy!
