I took the last month or so off of Instagram and my blog so I could be more focused when studying for my USMLE Step 1 exam for medical school, and I am so excited to be done with the exam and back exploring fun recipes and workout ideas! I know that nutritious eating is so key for me to have energy and brain power, so I wanted to make sure that I ate a "rainbow" of fruits and veggies while studying. I definitely had less time to cook and prepare foods myself, so this was super handy and I know it will be so helpful to have kencko smoothies during my rotations too, as I am about to be in the hospital all day, starting bright and early.
Each packet of kencko contains 2.5 servings of fruits/veggies, half of your daily recommended amount - so I enjoyed two smoothies a day for my full servings! You just shake it with your choice of milk or water for a delicious and refreshing drink. They keep in all the fiber and nutrients of the produce, as opposed to juice, and there is such a variety of flavors!
Of course, I had to think outside the box (or smoothie cup I guess) and see if I could incorporate kencko into a brunch recipe - so I made rainbow pancakes! I used the beet reds, peaches, yellows, jades, and purples for my pancakes, and enjoyed with berries, some shredded coconut and pumpkin seeds! These are definitely full of nutritious fruits and veggies and super easy to make.
Here's how:
Ingredients (makes 5-8 pancakes):
3 ripe bananas
1 ½ cup oats
¾ cup milk of choice
½ tsp cinnamon
1 tsp vanilla
Your choice of kencko smoothie packets (one per pancake)
Steps:
Blend everything but the smoothie packets in a blender until smooth.
Add a large scoop of batter (about ¼ cup) to a small bowl and mix with a kencko smoothie packet.
Cook on a pan at medium heat for a few minutes until done, and flip.
Repeat with other smoothie flavors until the batter is used up! Enjoy!
