This is probably the longest name of any recipe ever, but it’s actually only 6 ingredients, and super easy to make! I love the bright purple color of the dough and how it turns more magenta when baked into cookies!
This healthy vegan cookie dough recipe is full of lots of healthy veggies and nutrients that is delicious and so pretty as well! This is also nut- and gluten-free and you only need 6 ingredients to make it!
Here’s how to make this:
Ingredients:
1 purple sweet potato, cooked until soft
1 can chickpeas, drained and rinsed
½ cup cauliflower (I used riced cauliflower - easy to measure accurately!)
1 tsp vanilla extract
½ tsp almond extract (optional, omit to keep this nut-free)
Dash of cinnamon
⅓ cup chocolate chips
Steps:
Roast a medium/large purple sweet potato in the oven at 375F until soft, about 40-50 minutes.
Peel the potato, then add the potato to a high-power blender along with the chickpeas, cauliflower, vanilla extract, almond extract, and a dash of cinnamon.
Blend until evenly combined and no potato lumps remain. Remove from the blender and mix in ⅓ cup of chocolate chips.
Enjoy this as cookie dough, or make into cookies!
For cookies, roll into 1-2 inch balls and place on a lined/oiled baking sheet. Slightly press down the cookies with your hand to flatten, and bake at 350F for 10-15 minutes until firm. Let cool then enjoy some purple cookies!
