Halloween may have come and gone, but it seems like there are some ghosts still hanging around! I made some spooky pumpkin apple oats this morning and cut a banana into ghost shapes (with chocolate eyes) because I’m still in the Halloween spirit! I was excited because I discovered pumpkin apple sauce at Whole Foods and thought it would be a good addition to oats. I added raspberries, pecans, and some pumpkin chia seed pudding that I had made earlier this week on top.
You could also use regular apple sauce to make these. These are a great quick breakfast and it is vegan and gluten free (if you use gluten free oats) as well. You can also mix these ingredients together, add it to a jar, and refrigerate overnight to make these as overnight oats.
Pumpkin Apple Oats
Ingredients (the amounts don't have to be exact)
½ cup oats
½ cup pumpkin apple sauce
½ cup milk (I used oat milk)
Splash of vanilla extract
Dash of pumpkin spice
Steps
Mix all ingredients together in a pot on the stovetop.
Heat with frequent stirring until the oats have absorbed the liquid and are thickened.
Let cool, add fruit, nuts, and pumpkin chia pudding!
Pumpkin Chia Seed Pudding
Ingredients
2 tbsp chia seeds
½ cup pumpkin purée
½ cup milk
Steps
Mix all ingredients together in a jar or sealable container.
Refrigerate overnight or until thickened (at least a few hours).
