Miso Chocolate French Toast (vegan)

Happy French Toast Friday, with a great sweet and salty flavor combo: vegan miso chocolate French toast!

Miso and chocolate is such a tasty and unique flavor combination together, similar to sea salt chocolate but with a bit more earthy umami flavor. I used Eden Foods red miso paste for this recipe, and RDCL Superfoods “super cocoa” mix for this recipe, which tastes like delicious chocolate but has added vegetables and fruits and no sweetener! You can also substitute plain cocoa powder instead. I topped the French toast with freeze-dried strawberries and Lil Bucks cacao granola clusters for crunch. Use your favorite bread for this (gluten-free if applicable). This recipe is also nut-free!


Here’s the recipe:


French toast batter ingredients:

3 tbsp plant-based egg (I used Simply Eggless)

1 tbsp flax meal

1 tsp miso paste

1 packet RDCL super cocoa (or substitute cocoa powder)

¼ cup milk of choice


Steps:

  1. Whisk all batter ingredients together until evenly combined.

  2. Dip 2-3 pieces of bread (toast it first for better absorption of the batter) into the batter and fully coat it.

  3. Place bread on a stovetop pan and cook at medium-high heat until the edges get crispy. It will look dark brown when cooked due to the chocolate and miso, but not burnt.

  4. Add toppings and enjoy!
