Perfect for toast! This two-ingredient recipe was inspired by Veggiekins Matcha Cashew Butter, but this is a nut-free version and made without any need for a blender/food processor! Just mix 1-2 tbsp of sunflower seed butter and 1 to 1.5 tsp matcha powder together with a spoon until evenly combined!
For a quick and delicious breakfast, spread the butter on toast, add banana slices, sprinkle with more matcha powder and some granola (I used a local company Lil Bucks turmeric lemon myrtle granola, but they also have a matcha granola that would be perfect on this), and enjoy! This matcha butter would also be great in a yogurt bowl, on pancakes or waffles, or spread on fruit.
You could make this spread with cashew, pistachio, or almond butter instead, or use tahini for a savory version. You also add in a splash of vanilla, or a drizzle of maple syrup or honey if you want this to be sweeter. Try it and let me know what you think!
I used 1 Trader Joe’s matcha packet, but you can use any type of matcha - look for ceremonial grade to ensure it will blend smoothly.
