I am enjoying some tropical fruit for a lovely summer breakfast with this bowl of mango strawberry coconut baked oats! I used Pillar’s Yogurt drinkable mango yogurt for extra mango flavor - yum! You could use any milk of choice as an alternative, but if you are a huge mango fan, try using this yogurt - you will be very glad you did!
To make the baked oats:
Makes 1 serving
Ingredients
½ cup oats
½ cup mango Pillar’s yogurt (or milk of choice)
½ mashed ripe banana
½ cup chopped mango
1 tbsp coconut flour
1 tsp baking powder
Handful of chopped strawberries
Handful of shredded coconut
Dash of cinnamon
Splash of vanilla
Steps
Preheat the oven to 350 F.
Mix all ingredients together in a bowl.
Lightly oil an oven-safe dish with coconut oil and pour the mixture into it.
To make it more decorative, you can add strawberries, mango slices, and more coconut on top.
Bake for 25-30 minutes - the top should be golden brown.
Let cool and then enjoy!
