Can you make French toast without eggs and dairy? The answer is YES!
I experimentally whipped up some vegan French toast this morning to use the last of my loaf of bread from the farmers market. I used flax meal to create the egg consistency. And, I borrowed some tips from Chef Lorena Garcia’s Perfect French Toast session I attended at the Chicago Gourmet - adding orange zest and extra vanilla! It made the French toast taste so bright and cheery, it was like it was infused with sunshine! I made a quick, health berry compote to add on top as well, which was delicious.
Ingredients
⅔ cup non dairy milk (I used oat milk)
2 tbsp ground flaxseed
2 tsp vanilla
1 tsp cinnamon
A few slices of bread, preferably day old or you can toast it!
1 tbsp orange zest
Steps
Whisk everything except the bread and orange zest together in a small dish, and refrigerate for 5-10 minutes. During this time, toast your bread to make it more absorbent. If you want to make the berry compote, you can start on this as well at this time.
Heat a skillet with olive oil over medium heat. Add orange zest to batter.
Dip bread slices into the mixture so they are soaked completely on both sides.
Place slices in the skillet and cook until golden brown - about 4-5 minutes on each side.
Let cool, add berry compote or other toppings, and enjoy!
Quick Healthy Berry Compote
Ingredients
Berries of choice - raspberries, blueberries, blackberries, and strawberries all work great!
Dash of cinnamon
Splash of vanilla extract
Splash of water
Splash of maple syrup
Pinch of orange zest (optional)
Steps
Mash berries and mix in other ingredients.
Heat in a small pot on low to medium heat, stirring frequently, until the liquid has mostly evaporated and the mixture has a jam-like consistency.
Remove from heat - it will continue to thicken as it cools.
