Grilled Avocados with BBQ Sweet Potato Chips

Hello, have you ever grilled an avocado before?

If the answer is no, you should change that! The avocado ends up warm and gooey, and it was a delicious and filling dinner!


I was inspired by the new barbecue flavored sweet potato chips that Bare Snacks sent me to make a summer "grilled" themed veggie-based meal for Meatless Monday! These chips are so tasty and also really healthy! There are no oils or sugars added, which is great.


I don't actually have a grill in my apartment, so I used the grille shelf in my toaster oven to get grill marks to pretend I grilled haha! It actually worked quite well!



To make this meal, slice an avocado in half and lightly brush with oil. I used avocado oil - because, ya know, I’m grilling avocados - but olive oil would work great too. Flip the avocado face down on a grill or pan and cook for about 5 minutes. I drizzled some balsamic vinegar on the avocados after cooking.


Aren't rainbow carrots so fun and colorful? And tasty!

Then stuff the avocados with whatever “grilled” veggies you want! I cooked red peppers and multicolored carrots, and also added some grilled vegetables that I had leftover (squash, zucchini, broccoli, sweet potatoes, and beets). And of course, the BBQ sweet potato chips for the finishing touch and to add some crunch! I sprinkled it all with Trader Joe’s Everything But The Bagel seasoning, which is one of my favorite seasoning blends. Then dig in!
