Crispy Air-Fried Mushroom Toast


These crispy mushrooms are an easy way to add some crunch to a delicious veggie-filled toast - or enjoy as a snack! It only takes three ingredients!

One of my go-to grocery items is the Trader Joe’s mushroom medley from the frozen section, which already has olive oil and seasoning on it so it’s super easy to make and I include it in my lunch/dinner most weeks as easy meal prep!

To make these mushrooms crispy, I just tossed the mushroom mix with a mix of 1:1 almond and oat flour and then air-fried them. This recipe is already gluten-free, but to make this nut-free, you can substitute bread crumbs for the almond flour. If you want to use fresh mushrooms instead of the frozen mushroom medley, just add 1-2 tbsp olive oil, a dash of salt, pepper, parsley, and garlic to make a similar seasoning once you have rinsed and chopped the mushrooms.

Ingredients:

1 bag of Trader Joe's frozen mushroom medley

⅓ cup almond flour

⅓ cup oat flour

Dash of oregano


Steps:

  1. Toss the mushroom medley with the flour and oregano until evenly coated. Sift away the loose flour with a strainer, then air fry at 350 F for 15-20 minutes until crispy and golden brown on the edges.

  2. Let cool slightly and enjoy while warm and crispy!

  3. To make the toast, add hummus, air-fried tofu, cucumber slices, and rainbow carrots (also a frozen pre-seasoned mix from Trader Joe's that I love) along with the mushrooms.

These crispy mushrooms can also be great in a salad or grain bowl. I hope this gives you an idea for a quick, tasty, and nutritious meal!
