Chocolate Crusted Pumpkin Pie Bars

One of my favorite baking brands, You Again, just dropped a new flavor today, which I was so excited to taste test and highly recommend!


You Again is the first baking mix brand inspired by ancient nutrition and Ayurveda, an ancient holistic practice from India. These mixes are created with Ayurvedic principles in mind, using simple whole ingredients, to support our physical and mental well-being when you enjoy the products!

Their new Chocolate Graham flavor is chocolatey and has a great texture, with bonus Ayurvedic ingredients! I love the combo of chocolate and pumpkin, so I decided to use it as a crust to make a fun fall treat!

Ingredients (makes 12-16 bars)

For the pumpkin filling:

1 cup pumpkin puree

½ cup coconut cream (scrape off the creamy, more solid part)

2 tbsp maple syrup

1 tsp pumpkin spice (or ¼ tsp of cinnamon, ginger, allspice, nutmeg, and a dash of cloves)

¼ cup brown sugar or coconut sugar

2 tbsp cornstarch

2 tbsp cashew or almond butter

Sprinkle of salt

For the crust:

1 package You Again Chocolate Graham cookie mix

¼ cup water

⅓ cup coconut oil or melted and cooled vegan butter

Steps:

  1. Mix the pumpkin filling together until evenly combined - it works best to use a hand mixer to get the cornstarch completely mixed in, but you can also mix the dry ingredients first by hand and then combine if you don’t have a mixer.

  2. Let the pumpkin filling set while you prepare your crust.

  3. Preheat your oven to 350 F. Mix the crust ingredients together, then spread into a lightly oiled 8 x 8 inch baking pan.

  4. Pour the pumpkin filling on top and spread evenly.

  5. Bake for 35 minutes, then check every 10-20 minutes and continue to bake until the pumpkin filling is set on the entire top - this takes about 45-50 minutes total. The pumpkin filling should be no longer liquid and not move when jiggled.

  6. Let cool, refrigerate at least 4-6 hours (I refrigerated overnight), then slice and enjoy! Best shared with a side of crisp fall air and spooky Halloween movies!
