Blueberry Basil Cheesecake Smoothie (vegan)

This delicious and creamy smoothie has protein, antioxidants, and no added sweetener or banana! It tastes bright and summery with the flavor combination of blueberries and basil! I know some people don’t like the taste of banana in smoothies, so this is a great option for you.

I had fun decorating the glass before pouring in the smoothie to make it look extra fancy - simply spread some blended tofu or yogurt inside the glass and then sprinkle spirulina on top. I have seen this done with yogurt, which is likely easier, but I didn’t have any on hand, so I just added some soy milk to 1/4 block of tofu leftover from the smoothie and blended until it was the consistency of yogurt.


 

Here is the recipe to make this smoothie:

Ingredients (makes 1 smoothie): 1 cup frozen blueberries ⅔ cup milk ¼ block tofu (regular or silken, not extra firm) 1-2 tbsp unsweetened almond butter (ideally creamy but if your blender is strong, crunchy works too) 1 tsp vanilla extract ½ tsp almond extract 2 tbsp lemon juice 1/3 cup loosely packed rinsed fresh basil leaves


For decorating:

Greek or Greek-style (aka thick) plant-based yogurt or ¼ block tofu and 2-3 tbsp soy milk

Blue spirulina powder

Instruction: 1. Blend all ingredients together.

2. Spread yogurt or blended tofu in a few small curving stripes inside the glass, then sprinkle with spirulina powder to coat the edges of these stripes.

3. Pour the smoothie into the glass, garnish with a small basil leaf and some blueberries, and enjoyI
