Getting up early for work on Monday is a lot better with a cheerful mug and a warm blueberry banana chai mug cake! I came up with this recipe idea while drinking chai tea last night, and decided to use the rest of my tea and make a mug cake that would be ready to go in the morning.
This mug is HUGE by the way, and way larger than mugs I usually make mug cakes in, so it took longer to cook and actually made enough for breakfast for both my mom and I! So if you are using a regular sized mug, I’d recommend cutting the recipe in half. It took me probably about 5-7 minutes total to cook this, but most mug cakes only take 1-3 minutes, so just microwave it for 1-2 minutes at a time and monitor it until it is cooked. the top should look kind of like a muffin at the end.
If you want a strong chai taste, which would also enable you to not need the extra spices, make a concentrated chai tea - just use 1/2 cup water for a whole chai tea bag. Then you can omit the cardamom and allspice and you will still have plenty of chai flavor.
Here’s the recipe:
Ingredients
1 chai tea bag
About ½ cup water
¼ cup coconut flour
¼ cup almond flour
½ cup oats
2 eggs
½ mashed banana (and some slices for the top)
1 - 2 tbsp honey or maple syrup
¼ cup milk
1 tsp baking powder
About ½ cup blueberries
Dash of: cinnamon, allspice, cardamom, salt.
Sliced almonds (optional)
Steps
1. Make chai tea in a microwaveable mug with about ½ cup water.
2. Add in the rest of the ingredients and mix well. You should fill the mug no more than ¾ full or it might overflow when baking.
3. Add some banana slices and slivered almonds on top.
4. Microwave for a few minutes until cooked. Watch it to make sure it doesn’t overflow if it is filled close to the top of the mug! Let cool and enjoy!
