Avocado, Strawberry, and Mozzarella Grilled Cheese

Next level grilled cheese: avocado, strawberry, and mozzarella grilled cheese!


This grilled cheese is the perfect combination of sweet and savory and was toasty, melty, and overall delicious. I never would have thought that fruit and cheese and avocado would go well together, but this combination is so good!!



Ingredients:

4 slices of bread

1 pint of strawberries, sliced

About 1 tbsp coconut sugar (or brown sugar)

1-2 tbsp olive oil

Mozzarella cheese slices (about 2-4)

1 avocado, sliced

Balsamic vinegar drizzle


Steps:

1. Dust sliced strawberries with coconut sugar and cook for 20 minutes at 350 F until juicy and slightly caramelized.



2. Drizzle olive oil on a slice of bread and place it oil side down in a skillet on low/medium heat. Place one or two slices of mozzarella cheese, avocado slices, and the caramelized strawberries on top.



3. Add another slice of bread on top to make a sandwich and drizzle with olive oil. Cover and let the bread toast evenly, then flip to the other side.



4. Once both sides of the sandwich are toasted and the cheese has melted, remove from heat and let cool for a few minutes. Add a drizzle of balsamic vinegar on top, and enjoy!

I have also made a variation on this recipe this using my waffle iron to cook the sandwich like a panini. It was super tasty, but very hard to photograph because it was so gooey and melty - but trust me that you will love it if you make it!



I put sliced strawberries on one slice of bread, covered them in chopped mint leaves and mozzarella cheese, and spread mashed avocado on the other slice. I sprayed the waffle maker with coconut oil, put the sandwich in, and held it in the waffle maker for a few minutes. I also drizzled it with balsamic vinegar after the photo, which was a good addition!
