At-home mini campfire with s’mores - apartment friendly!

On a rainy night, what could be more fun and cozy than a mini “campfire” from the comfort of your home - complete with s’mores! I’d definitely take s’more of that!

All you need is a candle, toothpicks, mini marshmallows (I used vegan vanilla marshmallows from Dandie’s), chocolate squares, and any cookie/sweet cracker of your choice.

S'mores setup!

For the cookie layer of the s’mores, I made vegan tahini cookies from Sweet Potato Soul, which was a super easy and delicious recipe! I substituted peanut butter for the tahini since I had an open jar of peanut butter, but you could use any creamy nut or seed butter to make these. I baked them in a sheet pan so they could be cut into squares for the s’mores. Cut the squares larger than your marshmallows to be sure the fillings all fit once they are melty! I also added some sliced strawberries to my s’mores for s’more flavor. For another cookie idea, these simple vegan chocolate chip cookies (without chocolate chips) from The Plant Based RD work great too!

To make the s’mores, skewer 2-3 mini marshmallows on your toothpick and hold over the flame of a candle, rotating slowly to evenly cook the marshmallow to your preference. Larger candles with the wax closest to the surface and multiple wicks work best for the most evenly toasted marshmallow. If it’s a scented candle, it will make the s’mores experience even more fun - I would recommend a cozy smelling candle! It may take some trial and error to perfect your candle s’more roasting technique, but once you get the hang of it, it’s quite easy and very fun!

Once your marshmallow is nicely toasted and melty, add a square of chocolate and sandwich between cookies. You can also add a strawberry, or even some nut or seed butter if you want to amp up your s’more! Enjoy and then make s’more! (haha, I can’t stop with the s’mores puns).

My rainy day view!! Not quite camping in the wilderness, but still fun and cozy!
