Almond Butter Chai Banana Muffins

An upgrade from a simple banana muffin - these muffins have a fudgy, rich texture and great flavor, and are made with a few simple ingredients! I used a vanilla chai latte protein drink mix that I won at an event, but you can use any chai powder to make this! Here’s how to make them:


Ingredients

(makes 12-16 muffins)

- 2 ripe mashed bananas

- 1/2 cup creamy unsweetened almond butter

- 1 cup white whole wheat or oat flour

- 1 tsp vanilla extract

- ½ tsp almond extract

- 1 tbsp chai tea powder

- ½ tsp baking powder

- Optional: 1-2 tbsp maple syrup or honey to sweeten if desired

Directions:

  1. Preheat oven to 350.

  2. Mix all ingredients together until evenly combined into a thick batter.

  3. Lightly oil a muffin tin, and fill with the batter.

  4. Bake for 12-15 minutes - a toothpick inserted will come out clean or a bit sticky, but the muffins will continue to cook as they cool.

  5. Let cool, and enjoy!
