I just discovered that it’s possible to make French toast in the air-frier!! What a game changer! This was so quick and easy to make and very delicious. I chose to make my French toast with a lemon raspberry flavor! I even added some thin lemon slices on two pieces, which got caramelized and juicy when baked and I actually ate them with the French toast.
If you don’t have lemon or raspberries on hand, you can omit those for an equally delicious classic French toast flavor. This French toast is plant-based/vegan, using a banana to thicken the batter instead of an egg, which also adds some more natural sweetness and flavor. If you need to further thicken your batter, you can add about 1 tbsp of ground flaxseed as well.
You can use any bread for this, but be sure to check that it fits in your air-frier first! I used the multigrain sourdough from Trader Joe’s and it fit great in my air-frier, which is a compact one from Dash brand and on the smaller side. I also always recommend using bread that is not fresh (obviously not moldy or totally stale though), or toasted beforehand, so it will better soak up the batter. Here’s how to make it!
Ingredients:
4-5 slices of bread
¼ cup mashed raspberries
½ tsp lemon extract or 1 tbsp lemon juice
1 tsp vanilla extract
½ almond extract (optional)
⅔ cup milk of choice
1 mashed banana
Few thin lemon slices (optional).
Steps:
In a deep dish, mash banana and raspberries together with a fork. If your banana and/or raspberries are not fully ripe, you can microwave them for a minute first so they are more “mashable.”
Add the rest of the batter ingredients and use the fork to whisk it together.
Dip the bread into the batter on both sides, then place on aluminum foil or parchment paper and set in the air fryer. Add a thin lemon slice on top.
Cook at 375 F for 5-7 min, until crispy.
Let cool and enjoy with syrup and berries!
